Do you sell single trucks at all or are they all sets?

Yes, we sell them individually. After you put a set in the cart, change the quantity to 1.

129's won't fit an 8?

They can work but are a little too small for that width. 139's will fit best.

can i slap risers on these to make them same as standard riding

Yes but they won't ride exactly the same since they have a slightly different turning geometry.

Are these good for a 7.75 deck

With a 7.75 you could either use 129's or 139's. The 129's are a bit skinnier than the deck and the 139's just a tad wider then a 7.75. If you were ever thinking about riding a wider board in the future then go with 139's. If you're going to stick with the 7.75 than go with the 129's.
