Will the height of the trucks affect the amount of wheelbites ?

Yes! Exactly.
Lower trucks have less room between the truck axles (where the wheels go) and the deck.

So a low truck you can ride up to 52mm wheels.

The biggest wheel with a tall truck would be around 55-56mm.

Any bigger than that and you'll need to add riser pads to increase the distance between the trucks/wheels and the deck.

What size trucks do you guys recommend for an 8.0 size deck?

139's will fit an 8.0 perfectly.

Do u need Riser pads if u have Independent 139 low trucks with 53mm wheels.

If you ride them tight, no. Loose or medium loose you probably want to ride some 1/8 inch risers or shock pads.
