the large bushing is triangular right? how would i know the correct orientation for placing them?

Yes, they are both triangular. A triangle/cylinder actually.

The larger cushion goes on the bottom and the smaller cushion goes up top.

The bottom cushion is placed on the kingpin (with the washer underneath it) so that the wider part of the cushion is facing upward. The top cushion is the opposite and the wide part is down.

Would using the low bushings in regular trucks mimic chopping your bushings down to create a looser truck/more kingpin space for the nut?!

you could do that.
the "low" top bushing is almost half of the standard top bushing.
the bottom bushing on both low and standard is the same height..
